Chinese, Japanese, or the local chicken joint… which will it be for dinner?? I know, it’s hot and the last thing you want to do is slave away. Well, last week we enjoyed the pleasures of New York’s Union Square Framer’s Market for fresh fish, and organic produce and fruit.

In less than 30 minutes, we will prepare a delicious and nutritious meal that will scintillate your taste buds and do wonders for your waist line.

Roasted Striped Bass with Arugula Almond Pesto (See below for recipe from The Ultimate New York Body Plan)

Oven Roasted Tomatoes
Sautéed Broccoli with garlic
Mixed Berries with Fresh Mint

Arugula Almond Pesto
1 1/3 cups packed fresh arugula leaves
1/3 cup packed fresh flat leaf parsley leaves
½ cup packed spinach leaves
2 tablespoons blanched almonds, toasted
1 large garlic clove, smashed
1 tablespoon extra-virgin olive oil
Pinch of salt and pepper

Place the arugula, parsley, spinach, almonds, and garlic, in a blender or food process until blended. Process until finely minced. Add the oil and process until blended.

Season with salt and pepper to taste.
Makes about ¾ cup
